Vegan recipes don’t have to be difficult – in fact some of my favourite dinners take less than half an hour and taste simply amazing. We’re always on the hunt for new recipes to share with all our wonderful readers, especially when they involve some of the fabulous vegan gourmet food we have available in our shop – delicious!

Recipe No.1 Aubergine Parmigiana.

This recipe is perfect for a cold evening – simply cut up and pop in the oven for an easy vegan dinner. Created using 3 aubergines, our Seggiano black olive and tomato pasta sauce and a simply vegan béchamel, this hearty dish will have you sailing through veganuary in no time.

Recipe No.2 Pickled Cauliflower Salad.

Created by Mark, this simple pickled cauliflower salad is as simple as it looks! Perfect as the weather gets warmer, this dish can be prepped in advance to have as a side dish or have as a full dish for a filling lunch. Created simply by finely slicing cauliflower and onion, and pickling for 4 hours in vinegar, rapeseed oil and salt – we recommend our Nicolas Vahe Cucumber Vinegar – and serve with toasted pumpkin seeds.

Recipe No.3 Simply Pesto Pasta.

Okay so this might be a bit of a cheat dish but there’s nothing easier than a simple pasta and sauce for dinner! I love this dish and it’s delicious both hot and cold – perfect for taking to work. Simply combine cooked pappardelle pasta with vegan pesto and grilled peppers for a quick and delicious dish. I recommend using our Seggiano Pappardelle pasta with our raw basil pesto and grilled peppers for a simply delicious and easy veganuary meal!

Recipe No.4 Cucumber, Watermelon, Mint and Vegan Feta Salad.

Refreshing and delightfully summery, this dish is perfect as the weather gets warmer. Simply made from ripe watermelon, cucumber, thinly sliced red onion, vegan feta (optional), mint, balsamic glaze and mandarin oil – this delicious dish takes seconds to make. All you need to do is roughly chop your cucumber and watermelon, finely slice up your onion, sprinkle over your mint and feta and drizzle with balsamic and oil for a refreshing dish – perfect for everyday lunching.

We recommend using the Seggiano fig balsamic glaze and mandarin oil for a simply delicious taste.
